Ingredients

  • 1 pound 93%-lean ground turkey
  • 1 medium zucchini, shredded
  • 1 cup finely chopped onion
  • 1 cup finely chopped red bell pepper
  • 1/3 cup uncooked whole-wheat couscous
  • 1 large egg, lightly beaten
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon freshly ground pepper
  • 1/4 teaspoon salt
  • 1/4 cup barbecue sauce (optional)

Directions

Preheat oven to 400°F. Generously spray a nonstick muffin pan with cooking spray.

Gently mix turkey, zucchini, onion, bell pepper, couscous, egg, Worcestershire, mustard, pepper and salt in a large bowl, preferably with your hands, without overworking. Equally divide the mixture among the muffin cups. Spread barbecue sauce on top of each loaf, if using.

Bake until the meatloaves are cooked through or an instant-read thermometer inserted into the center registers 165 degrees F, about 25 minutes. Let the loaves stand in the pan for 5 minutes before serving.

    I was worried that the turkey was/would be undercooked, because I haven't cooked much with ground turkey before, and I was... even more intimidated when I saw that the juices were slightly bubbling over in the pan while it was in the oven, but these were so delicious! If I make these again, I might follow those other comments and add some BBQ sauce into the meat mixture, but still, It was TASTY! :pRead more

    Quick and easy, scrumptious and healthy! I've made this many times, and always used 1 1/4 lb. ground turkey as that's the... only size package available where I shop. While I pretty much follow the recipe otherwise, I've found that the egg, couscous and vegetables contribute enough moisture that ground breast meat (99% fat free) can be substituted for the 93%, and then they're almost fat free.     These are very good and delicious. I wasn't sure how they would turn out but I wanted to try them because they are fast and... semi-healthy. My husband and I loved them and had left overs. Plus, I don't feel very bad that my husband had 2.5 servings because that is still only 500 calories - which isn't bad for a man and dinner! Didn't change a thing about the recipe.     This was very easy to make, and turned out amazing!!! I made a few minor adjustments: substituted grated carrots for red... peppers (we're not pepper lovers), added 3 cloves of fresh minced garlic, used whole grain mustard instead of dijon (didn't have dijon on hand), added 1/3 cup panko breadcrumbs, and topped with a bit of chili sauce instead of bbq sauce. I cannot wait to eat the leftovers, and will most definitley make over and over again!Read more

    I was a bit skeptical on the whole "cupcake meatloaves" preparation, but I followed the recipe exactly...the only changes I... made were by adding a lot more salt/pepper and a tablespoon of bbq sauce to the mix.
