My favorite food on earth is steak and french fries.
Thanks to Emeril, now there is a new twist.
This recipe was excellent. I loved it and even my 11 yr old loved it.
The yucca fries were almost like regular fries but with a subtle sweetness. I made my own Thyme and Green Onion Ranch Sauce for dipping. It was fantastic.
The Chimichurri was perfect for marinating and dipping the tender steak into. I noticed that it is good for even a salad dressing.
I made one steak for my family, and after doing this recipe, next time I shop I will pick up 2 steaks for it instead.

I loved the flavor of the sauce/marinade. The flavors came through nicely on the skirt steak. However, the cooking times were way too long. I should have followed my instincts and only done about two minutes a side and called it done. Yes, my steak was very thin and I understand that could affect it, but we did half the times listed and the steak was very well done. I don't know of many skirt steaks that are cut thick enough to cook for that length of time and still be medium rare. I would definitely make again though.

I am not exactly sure what to say about this recipe I don't no if the recipe itself was bad or I just simply don't like chimichurri? At any rate I am gonna guess that I just don't like chimichurri because I use emerils recipes all the time and they never let me down this is the first time I have ever had anything bad to say about his cooking, anyways on to this marinade I am a big fan of vinegar I put it on every vegetable I eat but this marinade had way to much vinger for my liking it almost tasted like a pickled steak. I will have tok order chimichurri at a restaurant to see if it was just me or maybe I did something wrong.
