    The eggplant was really delicious. We had cut some into pieces to try and they were pretty salty but when they were put into the casserole dish with the sauce and cheese they came out fine. Maybe don't salt the eggplant before breading it but otherwise it turned out to be a great dinner.

    I used this recipe for the sauce and the Mike's Deli recipe for the eggplant portion of the Eggplant Parmesan. It was out of this world. Bobby Flay's Roasted Red Pepper Tomatoe Sauce is the best I have ever had. I will certainly make this again!

    This recipe is sooo good. It did take me a lot longer to make then the estimated time - about 5 hours and A LOT of dishes!! I did have two babies to take care of as well but i think it still would have taken at least 2 hours even with no distractions. I didn't change anything, and it was perfect.

    This was a fantastic dish..The only thing I did differently, was add cooked mild italian sausage to the sauce and pureed it..Everything else was perfect..This one will definitely be made again!

    Best I've tasted. The roasted red pepper tomato sauce made the difference from similar receipts. My neighbor loved it.

    This is even better than I hoped! I used Gouda cheese because it was what I had, and made three small baking dishes instead of one large. I could not have been more pleased with the flavor and texture of this dish. Thanks Bobby!!
