    Very good. I had to cook my potatos a lot longer but I am not sure if I got them thin enough. We also put a cheesey sauce on ours instead of broiling cheese on top. SO GOOD!!! I will definately make this again.

    This is a great brunch dish! It's easy to modify for however many people you're cooking for. I figure one potato and 2 eggs per person...plus I've reduced the amount of butter to 1 tablespoon per potato. I honestly don't notice any difference in the crispness or flavor with the reduced amount of butter. Be sure to really salt & pepper the potato mixture! To get my potato baskets as crispy as I like them I have to cook them longer - a good 15 or 20 minutes extra. I loosen them from the muffin tin before I pour the eggs in so they're easier to get out in the end. We skip the toppings & have some bacon or sausage on the side.

    We loved it. Very tasty, but good portion size small enough to fit into a reasonable sized meal. We will be making this again.

    Very Good and beautiful presentation. Made it with provolone mixed with mozzarella cheese melted on top. Used frozen hash browns which I had on hand, Husband and my sons all enjoyed. Thank you Sunny for a terrific breakfast/brunch recipe.

    These were a neat breakfast idea...in theory. My hashbrowns didn't turn out crispy and I wasn't sure EXACTLY how long to cook the eggs so they were overdone. I'm definitely going to try this again and hope for a better outcome. I was concerned that the 'baskets' wouldn't come out of the muffin plan cleanly, but once I scraped around the edge with a butter knife they popped out ok with a rubber spatula. I used cheddar cheese because it's what I had on hand. I was a little leary about the proscuitto, because frankly it's not very tasty, but when it was broiled with the maple syrup it was great! I will try this again, hopefully giving it 5 stars next time. Happy cooking!

    Yum! Would make again! I scrambled the eggs because my family doesn't eat runny eggs and I used turkey Bacon because we don't eat pork.
