I love vinegar, especially balsamic, and this dressing suits the salad perfectly. The balsamic makes it slightly rich, while still being a light refreshing salad! Good job Ellie!!!

It was very easy to make, and is very light as well. All the flavors blend very nicely, and the balsamic dressing gives it a nice zing.

Its starting to get a little freaky how I keep trying Ellie's recipes and none of them need any improvement. Even with my favorite magazines I find recipes I don't like that need tweaking. This salad was wonderful...I did use ham instead of canadian bacon b/c I could not find a nitrate free brand.
If you are new to Ellie's recipes, so far we have enjoyed: Portobella Lasagna Rollups, Stuffed Turkey Burgers, Thai Style Halibut, and her energy mix (cherries & walnuts. But there are definately many more still on my list to try.

This was such a simple recipe. I loved it (and I am not a big fan of salads but the combinations of flavors was very synergistic!! My favorite part was the Pita (I love carbs and the dressing was explosive. I did not use parsley, but don't think it affected the recipe at all. I recommend this for people who are picky salad eaters or those who aren't big fans of veggies. This salad is perfect for the high protein eater who needs to get their greens!

I really liked the concept of this salad, but tried a few variations. First, in place of the tomatoes I used red seedless grapes. I also used a couple slices of turkey bacon, crumbled. Skipped the pita and used bottled Balsamic. The bacon added a certain smokey flavor, while the grapes cut the acidity of the dressing. It was so GOOD! Would definately definately have again.

I'm not a fan of eating spinach salads without loading it up with bacon, bacon fat and honey mustard dressing.....until now!! I was very surprised that I enjoyed this much healthier version...the dressing too!!
