    I love these muffins. They are super moist and my whole family loved them! I did use an apple and a half.. perfect. My only complaint is that I only should eat one at a time : Enjoy!!

    I am so happy I watched Ellie's Sat. morning cooking show a few months ago. Since then I have used several of her low calorie/healthy recipes. This is the 4th recipe I have tried and these muffins were very good and taste so much better than any store bought kind which usually have a lot of fat & sugar in them. I didn't have the buttermilk so used 1% reg milk. The rest of the recipe I followed as written. I baked them for exactly 20 min. and did not use cupcake liners and they were perfect!! I think you could use whole wheat flour instead of the whole wheat pastry flour and they would be fine. Don't hesitate to make this wonderful recipe. I could hardly wait to try them once out of the oven. They came out of the pan just fine , using non-stick cooking spray. Thanks, Ellie for a wonderful recipe.

    These are the lightest, moist & flavorful Apple muffins! I couldn't find Wheat PASTRY flour and after a little on-line research discovered I could use a mixture of Half Whole Wheat Flour to half Cake Flour (for the 1 cup of wheat pastry flour and they turned out beautifully! I also added cinnamon to the batter, used Walnuts instead of pecans and made them in the LARGE size muffin tin.......yummmm!

    Kids loved em. Easy to make. The only thing that is a pain is finding buttermilk. And I would not use paper liners as the muffin really sticks to it and you lose half. I also cut down on the sugar by about 25% and they were still very sweet and delicious. Will make these again, and again......

    These are great! I did make a few changes, I didn't have buttermilk so I just used skim milk. Also didn't have pecans so I used walnuts. Next time I will use more nuts and mix them in not just put them on top.

    I followed the recipe to the word....and these are the absolute best muffins I have ever made or TASTED!

    Excellent recipe, muffins came out really moist and flavorful. Added nutmeg and cinnamon to the dry ingredients. Whole wheat pastry flour found at health food store. You can buy inbulk bin and get just what you need so the price is very economical. Way to go Ellie, LOVED this recipe!

    I followed the recipe exactly and the result was spectacular. I will cut the apples a little smaller next time. I made these for the kids to have as an after school snack and they devored them. Keep those great recipes coming Ellie!

    These muffins are so good and delicious! My son's preschool is doing an apple theme and we needed to bring snacks so we brought these -- not only did the kids devour them but the teacher asked me for the recipe! I didn't have buttermilk so I used just regular milk and they turned out just as good!
