I made these for breakfast and was suprised at how wonderful they are. My only change was to add 1 tsp of cinnamon instead of 1/2 tsp which is a personal preference.

I actually modified it a little. Instead of walnuts, I used oats and instead of buttermilk I used coconut milk. Turned out spectacular. Cooking time was a little over 20 mins, around 25-27.

These are the best muffins ever - so moist and tasty and the best part is that they are healthy and guilt-free! Everyone I have made them for loves them! Thanks, Ellie. LOVE your new cookbook!!

My husband and I made these just minutes ago, and they are terrific! Everything used was Organic and we followed the recipe to a T. We ended up with 15 muffins! (We believe she uses a deeper pan. This is something we will definately make again and again. Great to take to family dinners! Thank you Ellie, you're the best! :

Like other reviewers, I added 1/2 tsp of cinnamon to the batter. I also didn't have any pecans so I finely chopped half an apple for the topping instead (cuts down even more fat. These were the best lowfat muffins I've had. I buy lowfat muffins once in awhile in NYC from gourmet shops but these are better.

These muffins are a hit for everyone that I make them for. And the greatest part is that you dont feel guilty about eating them. They definately don't taste healthy!!

These muffins were great. I made for a Christmas brunch. Nobody believed they were 'healthy'.
