    This makes a very tasty, very moist muffin. I used more cinnamon than it called for (personal preference. The only problem I had was that I had to use muffin tin liners because I was taking them somewhere, and thus paper liners tended to stick to the muffin. Otherwise, they were great.

    I made a few changes to the recipe - omitted the 1/4 canola oil (used 1/4 cup of applesauce instead, totaling 1 1/4 cups, and used full-fat buttermilk. Also, I doubled the amount of topping because I loved it so much! The first time I tried this recipe, I grated the apple into the batter instead of cutting it into chunks, but the second time I cut it into chunks, which yields better apple flavor. These muffins are very moist and flavorful!

    I have made these muffins three times and I added chopped walnuts to the batter. These muffins stay so moist and I put cream cheese frosting on them. I will make them many more times. Tulie, Champaign, IL

    These are simply wonderful...easy to make and always delicious. Plus, they are healthy. I call them my Hurricane muffins becasue I always make them when a hurricane is headed our way. I know that even without power, we will have a healthy breakfast for 5 or so days if these are ready and waiting for us.

    Delicious muffins! They are moist with a nice crunch from the pecans. The apple, cinnamon and pecans make this muffin taste like apple pie. I would add a bit more cinnamon next time.

    I made these for my daughter. She leaves for school very early and doesn't have lunch until after 1pm, it is just what she needs to get her through the morning. Delicious, good for you and low in calories. What more could you want?

    Just made these and ate one before it cooled off. Very yummy--not too sweet, very satisfying. I added addt'l cinnamon to the batter and borrowed another reviewer's idea of making sour milk since I had no buttermilk on hand.

    I love Elie! KEEP BRINGING ON THE RECIPES! Would love to see a cookbook too!
