    I am a novice at baking and even I couldn't mess up this recipe. Muffins were very moist and flavorful. Couldn't find whole wheat pastry flour so did an exact substitution for whole wheat flour, also used bread flour instead of all purpose.

    I mad these today with a few minor changes.I used all purpose flour for the whole thing since I didn't have another kind. . I make my own sour milk by slightly underfilling the measuring cup and adding a small amt of lemon juice. Stir and let it sit for a few mins and its all you need. I didn't use pecans because with braces my daughter can't have them.But these muffins are moist and tender and yum yum yum!My daughter loved them and I will have to make some more ASAP. I think I will make extra and freeze for back to school. Oh yes...I must have had smaller muffin tins I got 15 muffins out of it.

    I have to say I have been excited to try this recipe, and am plesantly surprised by how tender and FULL of flavor they are! will use this recipe over and over. Didn't have whole wheat pastry flour, so used 3/4 cup whole weat flour plus 1 generous tablespoon of cornstarch. worked VERY well!

    I made these muffins as a healthy alternative, thinking they would just be 'ok'. But I have to say, they are delicious! very tasty as a great snack or breakfast. I was surprised that the cinnamon was only on top and not inside the muffin, but it works very well. This is definitely a recipe i will be using over and over!
