    I made these muffins for the second time tonight. The directions are easy and the recipe does not call for "odd" ingredients. For those who are dieting they are great. They freeze well and are very healthy for breakfast on the go. And most importantly they are delicious!!

    Even my hubby, who hates 'healthy' food adores these!!

    I added a 1/2 cup of frozen blueberries with the apple. So good!

    These were among the best muffins I've ever made--low-fat or not! Really moist, and the apple adds great flavor and texture.

    These are so great. I also excluded the oil to cut back on the calories. Again, my kids loved them. I loved the big chunks of apple. YUM!!

    These are just amazing! So moist and flavorful (I did take the suggestion of adding cinnamon to the batter. I used a 1/4 c. ice cream scoop to measure the batter into the muffin cups so I got 17 muffins--NOT that I am complaining! I must get these into the freezer b/c I know I won't be able to stop at just one!

    This recipe was great! The muffins freeze very well and even my picky boyfried who is not a fan of healthy food thought these muffins were really good.

    I love these muffins! After reading other reviews, I added 1/2 teaspoon cinnamon to the batter and they were outstanding. My daughter is very picky about nuts, so I mixed some finally chopped apple with brown sugar and cinnamon to top 1/3 of the muffins. The rest with nuts are for me! Thanks Ellie! I really want the Food Network to give you a show every night of the week! You are awesome!
