    This was such a pleasant surprise! I altered the veggies a bit, using red pepper, julienned carrots, water chestnuts along with the broccoli and sugar snap peas. I had w.w.angel hair on hand so I used it but I think a thicker noodle would be better. I added chicken since we had it for a main course dinner meal & I drew a blank as to what to serve with it...maybe a simple fruit salad? Can't wait for the leftovers!!

    I substituted Sriracha for the pepper flakes, and reduced the soy sauce by half and made up the rest of that with veggie stock (used that for the water as well I also added lime zest. Tasty noodles!

    This recipie was really good. It is like a healthy version of pad thai almost. The sauce was a little thin for me, next time I will probably add a little bit of cornstarch to the sauce. Great with Siracha drizzled on top. I used sesame seeds instead of peanuts. Easy and delicious!

    Thanks Ellie! I served this with asian grilled salmon and Ellies's summer rolls at a dinner party. Super healthy and very tasty. I would use grated garlic and Saracha instead of red pepper flakes next time.

    If you love the "peanutty" flavors of Thai dishes, then I think you will like this dish! I made it with brown rice noodles, because I bought them awhile ago and thought it'd be perfect to use for this recipe. Well, they got pretty sticky, but that's not the recipe's fault. :- The veggies, the flavor of the sauce/dressing, was just delightfully comforting. I did decrease the amount of soy sauce, and replaced with more water, due to not wanting too high of a sodium level. I can see adding chopped chicken, or shrimp - and making it a full meal. I paired this with Ellie's shrimp with the basil and tomatoes, which provided a balanced and nutritious meal. I don't think I have ever disliked any of Ellie's recipes! Thanks, again!

    It was so easy to make and the best peanut sauce I have ever made so far! I read the other reviews so I decreased the soy sauce to 1/8 cup, added garlic, used chili paste instead and cooked my vegetables in the same pot with my pasta. Thanks Ellie for a great low fat version!

    This is the best noodles with peanut sauce my husband and I have ever made. We love it and it's great because it's a healthier version. Lots of flavor. We will be using this peanut sauce for many other things as well. Thanks Ellie!

    Ellie...you're the greatest! This was fun to prepare as a "team", delicious and great at room temperature or cold for lunch the next day! It reminded me of my days as a NYC resident and those fabulous cold noodles with sesame paste that we always had. Try it!

    I love this recipe! I've made it several times and it keeps getting better and better. I found that I like it saucier (plus, I tend to use bigger quantities than the recipe calls for, so I doubled the sauce. I also started adding a finely chopped garlic clove or two, depending on how much I'm making. This past time, I used Chinese noodles instead of linguine -- also great!
