    I absolutely love this recipe....there is soo much flavor. The first time I made it just as the recipe follows. I have since added more to it each time. I added baked/grilled chicken along with sauteed peppers. I also added strips of carrots and olives. It was absolutely delicious. I also added barbecue sauce as a base on each wheat tortilla. It gave it soo much flavor. I would definitely recommend this recipe to anyone!!

    I decided to make this with some salad for dinner one night. It was so tasty! The only difference was that I added a tiny bit of finely minced ham...SO TASTY. It definitely would have tasted excellent without the ham too. VERY EASY! VERY TASTY!

    We ended up eating it more like a soft taco, but it was really flavorful. We've also added grilled chicken and mushrooms to make it more substantial for my husband.

    I tried this today but for some reason I had it in my head that the recipe called for feta cheese so I didn't buy any goat cheese when I went to the store. I also sauted some baby portabella mushrooms. It was very good but I can't wait to try the goat cheese. I am a big goat cheese fan. I think spinach would be a great substitute for arugula or even a mix of the two. Also, someone has been going thru Ellie's recipes and anonymously rating them as horrible. What's up with that?

    I made this twice, once using arugula with goat cheese and once using spinach with mozzarella. The flavors work great together. I have learned that I don't like the flavor of goat cheese. I may try another tangy cheese because the mozzarella is rather bland.

    I only gave it four stars instead of five because both times my "pizza" crust was not crunchy. The center was VERY soggy. Maybe it's the type of tortillas I used or I'm just doing something wrong in the oven.

    I cooked the arugula, onions and included 1 pound of mushrooms for substance on Sunday and kept it in the fridge. Each night I would come home from work and make a pizza in the oven. If I couldn't wait - it would end up as a tasty quesadilla, but when I was patient a crunchy, sophisticated flavored pizza. SO good. Another staple easy go to menu item! THANKS ELLIE! A great light meal before you go to Yoga or the gym at night.
