Well, first of all I have to say that I usually love Ellies recipes and have no complaints. This time, I was not so impressed. It's good, but as I tasted it before I declared it finished, needed salt (I know, it's not as healthy, but there wasn't enough..., and there was still something missing...then I realized that it was lacking umami! So I added a little bit of sesame oil, and about as much worchestershire sauce, and that did it. Now the recipe is good, and I'll eat it with relish!
Thank you Ellie, for inspiring us all to eat more healthily.

I loved this recipe! Both my toddlers loved it too. I added more apricot preserves to ensure my little girls would eat it and they loved it! Yum!

I thought this was an excellent recipe without any modifications and I used an organic apricot fruit spread without any added sugar. I rightfully thought this would be a healthy way to get my twin toddlers to eat more beans and they loved it as well as the adults. I am continually impressed with her recipes; every one I have tried has been delicious and healthy!

I've made this 3 times now. The first two times were true to the recipe and it got mixed reviews (from rave to so-so. The 3rd time I doubled the sauce and doubled the ginger on top of that. I also added cut up dried apricots. It was much better. I think the ratio of ginger needs to be increased and the sauce need to reach all the beans. I also used a salad spinner on the beans and the sauce adhered more (less water. The flavor combos are wonderful - don't be afraid to ramp it up.

Terrific recipe! Has been a HUGE hit at my place! Recommended especially if you love green beans and black beans; the edamame adds a wonderful 3rd bean to the mix!

You can even cut back on the amount of dressing (and/or use fewer beans and it still works well; the current dressing amounts are more like a marinade. I would also recommend placing it in the refrigerator for an hour or so before serving. I don't find that it works as well as a leftover though; the black beans especially tend to get too soft. But if you do have it as a leftover, I prefer heating it in the microwave until just warmed (not hot rather than eating it cold.

I tried this recipe in an effort to get my kids AND HUSBAND to eat more vegatables. Well, the effort was completely wasted! The kids hated it and my husband, being the big baby he is about vegatables, wouldn't even try it. I thought it was okay, but didn't like the edamame. Sorry.

I made this for a memorial day party and it was very well recieved. It went over quite well even with renoun junk food junkies! I, personally, would have cooked the green beans a little bit longer, but it was still really delicious. i always like to be the one to bring something different and slightly exotic to parties, this was a great choice! The dressing is really unique and tasty!
