    I was afraid to try the strange combinations of apricot preserves and black beans, but it is yummy. This is one of my favorite recipes, because it goes with so many things.

    The salad is perfect on a hot summer day. Plus, the calories, high fiber and nutrients, make it a great salad. It wasn't as tasteful as I had expected, but it was still good.

    I just had this dish at a cookout and made it the next day;

    I used fresh peas from the local farmers market and it is so good; I very highly recommend it!

    I really liked this quick and simple salad. It was nice to have a salad that was out of the ordinary. The only changes that I made was using frozen green beans and ginger from a jar.

    My two kids have opposite tastes; my daughter hates health food but will eat beans. My son hates junk food and hates beans. But this was a bit hit with both, and even I liked it! And I feel good about feeding it to them, too. Thanks so much, Ellie!

    I left out the canned beans and oh my! I ate the left overs for breakfast... It is light and you feel so good after you eat... Thank you and keep the recipes coming...

    I am not a big lover of beans but am trying to eat the "good" carbs and stay away from the "white" carbs.
    The combination of the beans and the wonderful "sauce" that you toss the beans in is outstanding. We used no sugar added apricot jam since our house has diabetics and it did not skimp on the sweet tanginess of the apricots combined with the other ingredients.
    Thanks, Ellie! This one is a KEEPER!
