    I initially tasted this while the eggplant was still warm, and it was very blah. I wasn't sure that I would want to eat it at all. Once the dip was chilled overnight, though, the eggplant absorbed all the flavors of the dip and I really enjoyed it. Will make again.

    This is so good and you can just call it "dip", if faced with people who claim not to like eggplant. It may well convert them.
