Ingredients
  • 1 tablespoon olive oil
  • 3 cloves garlic, chopped
  • 2 (8-ounce) boneless, skinless chicken breasts, halved
  • 8 ounces baby spinach
  • 2 tablespoons balsamic vinegar
  • 1/3 cup low-sodium chicken broth
  • 1 cup low-sodium canned chopped tomatoes with juice
  • 2 cups whole wheat couscous, cooked

Heat a large saute pan over medium-high heat. Add the olive oil and heat. Add the garlic and cook for 1 minute. Add the chicken and cook about 4 minutes per side, or until cooked through and juices run clear. Remove the chicken and set aside. To the same pan, add the spinach and cook just until wilted, about 1 to 2 minutes. Remove from the pan and set aside. Lower the heat to medium and add the balsamic vinegar and chicken broth to the pan and stir, scraping the bottom of the pan to remove any browned bits. Add the tomatoes, bring to a simmer and cook 3 to 5 minutes.

Place the couscous in a serving bowl. Top with the spinach, chicken and balsamic-tomato sauce.

Delicious! I would definitely recommend adding the garlic before doing the sauce, as it burns very quickly. I sauteed half an onion with the garlic in the residual chicken fat (no need to add more oil), then added the broth and vinegar. I also cooked the chicken a little longer and tossed it in the oven at 350 for about 10-15 minutes. Remember to season the chicken, it will be bland without it! Served with quinoa. This was super delicious! I also seasoned the chicken beforehand and added a pinch of salt to the sauce. And I subbed out the couscous as I'm gluten free and put it over mashed potatoes which was nice as well. Even my BF who is notoriously picky gave this "a 4.8 out of 5" !! This is a great recipe. I am trying to eat a "cleaner" diet these days and this was an awesome addition to my recipe collection. I actually sautéed mushrooms with the garlic at the beginning. This is an excellent meal! I made a couple of changes, like substituting brown rice for the couscous and adding onions to the sauce. FANTASTIC!!! I was afraid it would be too acidic but it wasn't. There was a perfect blend of broth, vinegar and tomatoes. As it was reducing I was skeptical that I would achieve a 'sauce' as opposed to my usual 'runny mess' but IT WORKED! It was SO GOOD. I followed the recipe exactly and it turned out pretty decent, but not wonderful. I wasn't crazy about the couscous, and the meal overall was a little too acidic for my taste. I would suggest using fresh heirloom tomatoes instead of canned as sometimes they taste under ripe, which I suspect is to blame for it being too acidic. This is an awesome recipe to start with. First of I used boneless skinless chicken thighs and omitted the olive oil. I added garlic and onions to the sauce not the chicken, prevents the burning of the garlic. Also used fresh herbs from my garden and it gave it a a lot of natural flavor. Excellent recipe! We made a few modifications: I cooked the chicken first, then added diced onions and garlic until soft. After, I added a can of diced fire roasted tomatoes and the balsamic vinegar, along with a couple sprigs of mint. The end result was a recipe that turned out well, but not spectacular. I didn't follow the recipe exactly as the other reviewers expressed that not much sauce was left at the end and that the garlic got burned if added too early, so I made some modifications. I added more balsamic vinegar, broth, and tomatoes; if this changed the flavor dramtically, I would doubt it, but possible. Excellent! I used diced tomatos in tomato sauce instead of lower sodium ones and the taste was great. The tomatoes soaked up the vinegar nicely and it had such a wonderful flavor. My only problem was cooking the garlic with the chicken - the garlic began to get too brown and I threw it out and supplemented some garlic powder instead. I loved it. My husband and I wanted to try some healthy foods and this is what I picked. I would have to disagree with the reviewers who said it tasted like ketchup, ours had not such taste. It might be because I messed with the recipe a little bit. First I added shallots with the garlic and, as many others, seasoned my chicken. When it came to the sauce I doubled both the balsamic vinegar and chicken broth. This gave the sauce a nice balsamic flavor. I also used fresh tomatoes, the bigger cherries ones, which I salted and let sit for a while. I highly recommend using the fresh tomatoes. I found this recipe today and cooked it tonight. It is delicious. I did read the other reviews before preparing,so I sprinkled the chicken with salt, pepper, and some Italian herbs before frying. I also skipped the couscous because we don't care for it. I added the garlic after the chicken was almost done, let it cook for about a minute, then added the balslmic and let it reduce a bit. I then added a can of diced garlic flavored tomatoes and the juice, let that reduce a bit, and then added the spinach. Next time I will reduce the olive oil and drain some of the juice from the diced tomatoes before added. We let the tomatoes and some spinach keep simmering while we ate, and it reduced nicely and made a great tomato-spinach dish. I agree that if you eat the chicken without the tomatoes/spinach it is a little bland, but I'm not sure why anyone would do that since the mixture is so good. I tried this recipe last night for dinner. I only had about an hour to get home and get dinner on the table before my boyfriend had to leave for work. It was quick and tasted great! I'll definitely make it again, but double the sauce. I used plain Near East Couscous because I didn't have time to stop at the store, and it worked out just fine, but we had A LOT of couscous which swallowed up the sauce. I might even chop up some sun-dried tomatos to add in, just for a little more flavor. Flavorful, colorful recipe. Used Near East olive oil and garlic cous-cous and subbed water for chicken stock in the box recipe for more flavor. Garlic burned a bit as the chicken cooked, but it still tasted good. Chicken needed longer than four minutes on each side, although I pounded it flat prior to cooking. If you don't like this recipe, give it another try b/c you must have done something incorrectly!! This recipe has become a staple dish and is now on the weeknight rotation. This is not a spicy dish but it has loads of delicious healthy flavor. If my husband goes back for seconds for spinach and chicken and balsamic dressing, it must be good. It was super easy to make after a ling day's work and glad that it was loaded with vitamins. Overall, easy to make, filling..but lacking some flavor. I took the suggestion of other reviewers and toned down the garlic to 2 cloves, but the chicken needed some sprucing just tasted like it was pan fried, barely tasted garlic. The sauce was good but same thing needed some sprucing. I think I would cook it again, but maybe add some sall/pepper to chicken .. I also go the whole wheat couscous, it was ok, but I think I would get a flavored one next time. item not reviewed by moderator and published
We're trying to eat a lower cholesterol diet with lots of veggies - this recipe is great for our new health consciousness! I usually am not a fan of cooked spinach, but with the balsamic tomato sauce over the top of this, I loved it. I substituted quinoa instead of couscous since that's what I had on hand, and it was a filling and delicious meal.
