    This is quick, easy and full of flavor! If my husband, 4 year old and 10 month old all agree that this is a keeper, then you know it is good!

    I have been making this since the cookbook came out. My whole family LOVES it! And I make the spinach weekly. Even my three young boys eat it and don't complain!

    I tried this last night for the first time and will definitely be cooking this again. I couldn't find whole wheat couscous so I used a box of Parmesean couscous which added flavor. I used chicken tenderloins instead of breasts cut in half, also used extra chicken stock and extra tomatoes. This is quite easy and very quick. Makes a well balanced dish/meal.

    sounded good, but a bit bland. seasoned chicken with salt, pepper and garlic powder, then added sun dried tomatoes, chives and a little lemon to couscous. so tasty! kids, friends and husband enjoyed as well- easy and a keeper.

    I can easily see how to fix this recipe, but as presented it was tasteless and boring. This dish was everything I expect a "healthy" mean to be...not satisfying.

    I read the other reviewers' comments about seasoning the chicken and I'm really glad I did. I salt and peppered the chicken before cooking but the overall dish was still sort of bland. I'm not sure what it needed, maybe a bit of lemon zest or juice if I make it again. I love that it's such a well balanced meal of veggies, protein and whole grains but it was lacking a bit of flavor.

    I made this dish a couple of times and we always loved it. The balsamic vinegar gives it a great flavor. If I have fresh tomatoes on hand I add them as well.
    Like some other reviewers mentioned I also season the chicken before I cook it.
    We had it with couscous, rice or orzo.

    This recipe was easy and delicious. I seasoned the chicken before cooking it as well as adding thyme to the sauce and it added even more great flavor! In place of couscous I used brown rice. I will make this recipe over and over again!

    I thought this recipe was great. I used a couple fresh tomatoes in place of the canned because when I went to my pantry, I was out. I seasoned my chicken, like other reviewers suggested and found the taste great. I will definatly be making this again!
