We LOVED this recipe! The only changes I made was I added a little extra vanilla like another review had suggested and I cheated and used store bought low-fat whipped cream. It was great!! We will definitely be making this again!

Had this at a friend's house last night and it was delicious - hit the spot! To the anonymous reviewer who gave this one star and said it wasn't healthy, what I love about Ellie is her philosophy to not ban any food entirely, but to categorize foods into "often, sometimes, and rarely." It is fine to eat egg yolks, heavy cream and butter occasionally and in small quantities. Two egg yolks and 1/4 cup cream for a whole pie is not unhealthy, just take a look at the nutrition information. Most banana cream pies have 3-4 egg yolks, at least 1 cup cream, plus whole milk, butter, etc. I think this is a great special occasion dessert. Everything in moderation!!!

This pie does turn out great as far as texture etc. The pudding portion of the pie is virtually tasteless. The crust is great. I think the pudding portion needs some ooomph of some sort....perhaps some extract other than vanilla. I don't know if they make a banana extract or if you had some rum or something. I won't make again.

I made this yesterday and had a piece today for dessert. It turned out great, full of banana flavor and so few calories. I will definately make this one again.

I used Skim Milk and it was still rich with flavor. I do recommend an 8inch pie pan. The 9 inch didn't allow the filling to cover all of the bananas. My dinner guests loved it and were suprised that it was made with skim milk. A perfect end to an excellent dinner party.
