    Very tasty with the few changes we had to make since this was a last minute meal. We didn't have black beans :( so we substituted black rice. Using Alton Baker's how-to video for scrambled eggs resulted in awesome eggs in this recipe. We used a spicy salsa for ourselves and a peach mango salsa for our kids. Big hit all the way around!

    This makes for a great weekend breakfast (since it does take a bit of time to make, but I think it was worth the effort. Very tasty & healthy. I used chipotle flavor Tabasco hot sauce, and the smoky flavor was perfect.

    This is a delicious, well-balanced breakfast! I added diced panceta which gave me left overs for 4 omelets the next day that were awesome!

    Very good! I chopped everything the night before with other meals I was preparing, so it was very easy to prepare this the next morning. The only thing I changed was I left out the sour cream and used taco sized shells instead of burrito size.

    I was looking for a more filing, yet healthy breakfast and this is it! I did the prep work the night before, except for cutting the avocado b/c i didn't want it to brown. I did not use the beans b/c I'm not a fan. It was very good!

    This was really good and easy to make. I omitted the sour cream because my husband dislikes it, and added a little spinach that needed to be used up to the beans and red pepper mixture.
