I was surprised how much flavor these burritos had...really good flavor. The serving size was enormous too---both my boyfriend and I were extremely full after one each. Also, since my boyfriend is a meat eater, I substituted chicken instead of avocado, which I cooked in the pan before adding the onion/pepper mixture.

This was a fantastic recipe. My husband really likes to have meat with his dinner (I made this for dinner so I added two chicken apple sausages. I used Newmans own pineapple salsa as a nice pairing with the chicken apple sausage. Chicken sausage has 70% less fat that traditional sausage. This is not a 'pick it up and eat it with your hands' kind of burrito...get out the knife and fork and you wont't walk away hungry. I will make this again and again.

This is an excellent recipe! I made one for my daughter and I to have after our morning jog. I prepared them before we left and wrapped them in foil to keep them warm. She wasn't to thrilled about having the red peppers and avocado added on it at first but was very surprized after she started eating it saying "YUM" as she ate it! We had them again the next day!

Made this for breakfast and it was very good. Nice change from the eggs and toast. I omitted the tomatoes and avocados since I didn't have any on hand but this still came out amazing!

This is a great and quick recipe to satiate the stomach and the tongue!!!
I had some left over white eyed beans which I added to the burrito upping the nutrition quotient. I also added roasted garlic and fresh chopped cilantro to make it more flavorful. Thanks Ellie for a superb recipe!

I had some leftover black beans from dinner the other night so I made this for breakfast today. It was tasty and a good way to start the day. I will definitely keep this in mind. Now if only I can do on days I have to go to work.

I made a few substitutions, including omitting the avocado, but this is a delicious and easy breakfast recipe. I don't have a whole lot of time in the morning, so I leave the sour cream out and make it the night before. Then next day I pop it in the toaster oven, which gives it a great crunch.
