    I love Ellie's recipes...she's so much more about good healthy food than fancy techniques, which applies more to me! The frittata was simple and delicious and it wasn't expensive to go get all the necessary ingredients and as a college kid, every bit helps. Great recipe. Thanks Ellie!

    I loved this frittata and I did not find it too bland at all. I did add some red pepper flakes and crumbled turkey bacon. Maybe those additions spiced it up enough to keep it from being bland. Whatever the case, great recipe and nice for a light meal or brunch. I used Cabot 50% light sharp cheddar. The only problem I had was that I did not have an oven proof skillet so I made it as instructed but when it came time to put it under the broiler, I loosened the bottom of the frittata and transferred it to a baking sheet lined with foil. Worked just fine. A word of caution; please dont be tempted to put a non-stick pan under the broiler. Teflon creates very dangerous fumes when heated that high and can even kill pet birds or harm asthmatics in your home. Its also very harmful to even healthy people as well. Just don't do it.

    i made this for my kids who have celiac disease and cannot eat gluten which includes wheat, this was the closet we come to a "pie" theygobbles it up . i was shocked at how easy it was. while eating it the kids kept coming up with other things we could add to it . a hit in this house

    This was just a little bland. It tasted like eggs and brocolli. Not enough cheese, I think. I added plenty of salt and pepper.

    I used spinach instead of broccoli and added some tomatoes. I also put some hot sauce on it because I like things a little spicy. The dish was good, nothing spectacular. But it worked well with ingredients I already had on hand and made a healthy dinner.

    Made it for Sunday morning brunch and everyone loved it! Came out beautifully in a cast iron skillet. I cut the eggs down to 6 (there were only 3 of us, & next time I would cut the broccoli down to 1 or 1 1/2 cups (used frozen baby broccoli florets. The creamy cheese, broccoli & red onion combine nicely. I served with a fruit smoothie & homemade bread. Definitely keeping this one. Thanks for the healthy cooking tips!
