    Very easy to make, no matter what your baking experience level is. The cupcakes came out delicious and you can't even tell that they're a little bit healthier. Awesome recipe!

    I love this recipe! It was easy to make and everyone loved them! Ellie's recipes have not failed me yet. It's healthy and so good at the same time.

    Love Ellie's Style of cooking. Baking often and quite inspiring! Am allergic to Soy so 'vegetable shortening' is out. We prepare many of her recipes for the reason of being so simply easy to recall!Plus, the 'Taste Factor'. As she states,'food{s} do not have to be bland & boring to be Healthy'. Wish she was on more frequently during the week.

    Did not turn out like a cupcake. Was very dense--more like a bread, almost. The flavors were great but calling them dense muffins would be more accurate

    After reading the reviews I had to make them. I was concerned that my kids and husband wouldn't try them since they have carrots, but after Daddy said they were GREAT everyone followed and agreed. Thanks for the great recipe!
