    I made this for my parents who are adopting a more healthy lifestyle because of health issues. I first made the salad after my mom was recovering from back surgery and they loved it and kept begging for me to make it again! Happily, my mom is on the mend and she's making it regularly for the two of them to enjoy. Oh, and for every batch I made for them, I made one for myself and I thought it was great too, even a couple of days later!

    I added more lemon juse and some sugar to adjust the recipe. Something in the original was just off... maybe because i used a darker honey. I like the apple carrot comination but the dressing is not my fav

    Followed the recipe exactly, but after chilling, the mint permeated the whole salad. Before it chilled, the vinegar was overpowering. If I try it again, I will definately make adjustments.

    My boyfriend and I absolutely LOVED this recipe - it's the perfect new dish for our healthy lifestyles. It was so easy, inexpensive, filling, fresh, and absolutely delicious!! I even had the leftovers for lunch the next day, and it was just as yummy as it was the first night. I was getting bored with cooking until Ellie came along :- Thanks SO much Ellie I'm looking so forward to watching your show every week, and to making your recipes every night!

    Everything about this salad was GREAT! It was sweet, but healthy. I used a gala apple because I forgot to get a green one at the store and miracle whip light instead of the mayo and it was still good.

    My husband and I really enjoyed this dish -- it was very cool and refreshing. The only problem is that it doesn't keep for leftovers, so you may want to half the recipe if you are cooking for two. :

    This salad was great for summer but there were members of my family who thought the mint was a little heavy. If you are not much on mint I would cut it in half. Next time I'm trying it with a golden delicious apple to cut down on the tartness.
