This salad was great for summer but there were members of my family who thought the mint was a little heavy. If you are not much on mint I would cut it in half. Next time I'm trying it with a golden delicious apple to cut down on the tartness.

A very good summer salad, crispy, tart, and fresh tasting for those who like green apples, like me. I went easy on the mint and added a little extra honey because it was so tart.
