This recipe was SO good. I was a little nervous at first. I am not a huge fan of lime and was worried that a healthy burrito might be a little bland. It was NOT. You would never believe that you were eating something so healthy. All of the flavors worked perfectly together (especially the lime. I used some leftover grilled chicken that I had instead of the rotisserie and also put some hot sauce in the burrito because I like spicy food. My boyfriend was raving about these and was in shock when told him how healthy they were. Will definitely be making these again.

You will never think you are eating healthy with this amazing recipe! These burritos are scrumptious and the bean puree simply delightful! The whole family LOVES them, even the little ones who would normally NEVER go near anything green!

Always a fan of Mexi night at our house. Easy recipe, and very tasty.

This recipe was so great! I used my immersion blender for the bean spread, which, in my opinion, was the star. I made the recipe exactly as written, with no additions. Great for the summer when you don't want to heat up the kitchen. I also love that it uses rotisserie chicken, a real time saver. I had trouble wrapping the burritos up, but I'm sure this will get easier the more I do it.

AMAZING!! I made this recipe tonight, without the jalapenos, because I am a wimp. I added about a tablespoon of mozzarella cheese to each burrito, but honestly I wouldn't have missed it if it wasn't there. The bean puree was so flavorful and the green mix with the romaine and cilantro was so fresh and added such a bright flavor. This was SO satisfying and filling. Thank you, Ellie Krieger, for another winner!! I love food that tastes so sinfully good while being so wonderfully healthy. This recipe is a winner, for sure. TRY IT.

This is such a fresh and yummy entree. We added some sliced onions and kicked it up a little more. So good.

Super great and super easy. Loved the puree bean sauce and the lime on the chopped lettuce as a garnish, how simple and tasty. Will def be making these again. My husband loved it too, down to the yogert as Sour Cream.

I was questioning the part of putting the beans in the food processor, but it turned out great. Very tasty and simple to make.
