    The headline about sums it up. I followed the recipe almost to a T and was very pleased with the results (as was my boyfriend. The white bean puree was the best part, as was the lime. Both great touches for the summertime. Will be coming back to this recipe.

    I made this recipe tonight for dinner--it was absolutely delicious! We live in San Antonio, TX where there is an abundance of wonderful, authentic Mexican food available. As you can imagine, it is always delicious, but generally high in fat and salt content. How nice to have a healthier alternative that we can make at home! I'd love to see more Tex Mex recipes like this, so please keep them coming, Ellie....great job!
