Recipe was great! It was easy to make. The chicken wasn't dry. My 4, 6, and 9 year old even ate the mushrooms.

Wow! This recipe was very simple yet extremely delicious. I used boneless skinless chicken thighs and a can of diced tomatoes seasoned with basil, garlic, and oregano. I used canned mushrooms instead of fresh. I used cooking white wine. With all the substitutions, the meal was scrumptious. I will definitely keep it in my recipe rotation!

ooo myyyy goooooodnessss this so was so yummy my family loved it and it was easy....i cooked it for 3 hours on LOW heat and the chicken just feel apart..became more like a stew. I served it with a wheat bread to sooop the juice up. you all must try this!

Made this with boneless skinless chicken breast cut into chunks. I didn't have any white wine so I used low sodium chicken broth. So very good. I served this over cooked brown rice. I had one serving and froze the rest (not with the rice for meals later in the month. One serving each week.

I made this last night and it was great. I only had boneless skinless chicken breast, so i cooked them exactly the same as this recipe, but i then cut them into chunks. WOW, the result was super, tender , tasteful chicken. The vegetables were perfect. I served it over homemade spaghetti. Super .. thank you.

I made this last night and it was delicious. I added more of the bell peppers and mushrooms than the recipe calls for, cut the chicken into strips, but otherwise pretty much followed it- I eyeball most measurements so I'm sure it wasn't exact. The chicken was super tasty for white meat and the veggies/sauce over the top made it fantastic. My husband and I just loved it! Even not having the bone-in chicken didn't seem to lower the flavor levels. Great, healthy recipe that's easy enough for weeknights but yummy enough to serve guests.

I bump up the nutrition and add carrots and anything else I have on hand. Tonight I'm going to add green beans and zucchini along with the carrots. I know it isn't traditional but it really is yummy. I have also used chicken sausage before which adds tons of flavor. I bake them in the oven so I don't have to use any extra fat and what little is in the sausage drains off on the pan and not in my dish. Thanks Ellie for a healthier version of a family favorite!

What a delicious dish. My husband couldn't get enough of it. This one is a keeper. The only deviation from the recipe I did was to dice the mushrooms and omit the red pepper. I served this over rice for a twist. I can't say enough good about this one.

Oh my gosh..i never have imagined that a healthy version would taste so delicious and it was easy to make. I made this tonight. I followed all the measurement of ingredients as it was except on salt and black pepper. As i normally do on seasoning, I dashed here and there based on my experience. I did not have a dry white wine so I've used a white wine I already had which was on sweeter side. Nevertheless, it came out great. I served over linguine and paired with a red wine (Chianti. Everyone loved it! Thank you so much for wonderful recipe!
