This was pretty good, although I had to change it up a little. I didnt have a red pepper, so I used a red onion and I didnt have whole canned tomatoes so I used diced and served it over whole wheat pasta. It worked and was good, although I really love onions. I could have used more mushrooms though and I used a little bit more olive oil. Would make it again, probably with a few more variations.

This was so quick and easy to make - I have a 3 month old and I didn't feel harried trying to cook and keep him happy at the same time.
My husband and I loved it. I served it with brown rice and the sauce was so good with it. It has mushrooms in it (which my husband normally doesn't like, but he just ate around them (actually, I got extra! and he really liked it.
And, it's healthy!
We're on Weight Watchers and we were able to eat this and rice and not have to worry a bit about the nutritional values - it was a no-brainer.

I saw this on Ellie's program on Sat May 13th and decided to try it. It was absolutely delicious. The chicken was so tender and moist and the combination of flavors was superb. My husband was thrilled, and was amazed that it was a 'healthy - low fat' dinner :
