I have several chicken satay recipes that I would say are not as healthy as Ellie's version. The chicken was very tender and the spicy peanut dipping sauce was delicious.

Made this for a crowd of 12 people, so to save time, I left the boneless chicken breasts whole (instead of cutting and skewering and grilled them on the BBQ instead. The meat was still very tender, and the peanut sauce is awesome!

The chicken was good, but it was the peanut sauce that was spectacular!! It would be good on anything actually... Very easy and everybody loved it. Will surely make again!

Good quick and easy recipe that can be prepped ahead of time. I favored the spicy peanut dipping Sauce recipe over the chicken sate recipe. It seemed like the chicken marinade needed a little something more.....maybe lemongrass? Definately a recipe that can be tweaked to taste.

I made this last night for dinner. My boyfriend was very complimentary but I was thinking what I would do differently next time....Next time I will marinate the chicken a bit longer since the marinade flavors are so good. I will also thin out the dipping sauce a bit more with cider vinegar or tamarind juice. Just a couple tweaks...overall a great recipe!

I didn't have chicken so I used pork tenderloin, and was amazing! the dipping sauce was real good, however I added 2 tablespoons of coconut milk to it. I grilled inside on a grill plate. Served it with fried rice, and a egg roll. Yum was real good...thanks for gr8 recipe!

This is delicious! Such a different spin on the same ole, same ole, weeknight chicken. The peanut dipping sauce is so good but next time I will make it a little more spicier! It went so well with grilled pineapple slices and Paula's Chinese Salad. A sure winner!

This sate was better than most but needed a little tweaking, in my opinion. The marinade was good overall, but would have benefited from some cilantro. Also, the peanut sauce was too thick and not sweet enough. It was too predominant a peanut flavor. I did add 1 more Tbs sugar + 1 tbsp of maple syrup which helped thin the sauce and add more flavor notes to the dish. Overall, good though!

This is the best recipe EVER! I have lost count with how many times I've made it. The chicken comes out tender every time I make it and the peanut sauce is divine, plus it's super easy to make. To make it a complete meal I pair it with coconut rice and grilled pineapple.
