    I made this last night and my husband, who tends to be a picky eater, enjoyed this dish! The peanut sauce was hands down the best part! It was so tasty and easy to make. I did not have the curry paste and merely omitted it. I also kept the chicken in thin slices but skipped the skewers [I have a counter-top oven I use]. There seemed to be a lot of marinade for the chicken; next time I may keep some aside before adding it to the chicken for basting. All in all a wonderful recipe. If you like this I suggest you try Ellie's Teriyaki chicken recipe as well!!

    My family along with our guests and their kids gave thumbs up for this recipe. I also like the fact that the marinade was easy and didn't take very long. The only time consuming part was threading the chicken onto the skewers. I followed the seasonings exactly and used chicken thighs instead of chicken breasts. The lime zest was subtly perfect, not too strong. Will definitely make again.

    I absolutely cannot eat anything with even a grain of coconut. What can i substitute for it so i can make this recipe and many more? Would appreciate comments from anyone.

    This is one of the better if not the best peanut sauces I have made. I didn't have the curry paste, but it didn't seem to matter. I added 1 tsp of fish sauce, 1/2 TBS of sesame oil, and 1/2 cup of chopped roasted peanuts after the sauce was complete. It is salty, but it's not made to eat by itself. Just be sure that anything you are dipping into it or anything you are putting it on are not salty (I tossed some noodles with the sauce.

    It was a fair amount of work but the chicken turned out beautiful. I didn't cut it into strips but left it as breasts and they tasted great, the sauce was awesome!

    I've tried many chicken sate recipes with varying degrees of success. This is BY FAR my favorite. The chicken marinade is really flavorful and helped keep the chicken very moist, and the dipping sauce was great!

    I also left out the shallot in both the marinade and the dipping sauce -- next time I think i'll add it. Also i didn't have any fish sauce and didn't seem to notice anything different. I didn't have low-sodium and I only used 2 TBSP in the dip -- probably could have gone down to 1 ot 1 1/2 TBSP. Maybe a little more peanut butter to make it just a bit more peanut-y. Overall, quick and easy and the marinade was fabulous! I would try this with pork as well.

    This is the best sate sauce I've ever made, but I didn't use the low-sodium chicken broth and soy sauce....it was too salty because of that. One thing to note, I didn't see anywhere to heat the sauce and since it had chicken broth in it, I felt it needed to be heated. I put it on a low heat, stirring consantly until just about to a boil.

    I was born in Holland but raised in Canada. Indonesian cooking is a staple in Dutch homes because Indonesia was a colony of Holland for a couple centuries. I've made several versions of Sate, but this is definetly the best so far!! I omitted the shallot because you want the garlic and chiles to shine. We always serve sate (pork or chicken with another traditional Indonesian dish...Bami Goreng
