i loved everything about this recipe! it was so easy to make and super delish! the one thing i would do is make just 1/2 the amount of sauce or make double the amount of chicken (if i were to use the entire can of coconut milk then i'd make 3 times the amount of chicken. more than 1/2 the amt. of sauce was left after the chicken was all gone.

This recipe was amazing!!! I doubled the sauce recipe because I didn't know what to do with the other half can of coconut milk. Yes, it probably did take 15-25 min to cook, but the prep was more like 45 minutes... so give yourself a little extra time.

The flavors come together like they were made for each other. The chicken by itself was very flavorful and could stand on it's own, but the peanut sauce was devine and was an added bonus!!!

Thank you Food Network and Ellie Krieger for a delicious recipe, I will be making this again soon!!!

The dipping sauce is so easy to make. It was so delicious that we used it to also dip veggies. The marinade was also easy to make. I've always had a hard time grilling chicken; it would always dry out. This marinade kept the chicken very moist.

My initial plan was to follow the recipe for the skewers and dipping sauce but when I found out half of my family was late for an appointment, I made it into an on-the-go wrap. IFirst, I shredded the chicken and mixed it with the peanut sauce. I took whole-wheat tortillas that I had in the fridge, layered on some shredded carrots and baby spinach, then topped it with the chicken/peanut sauce mixture. I folded them up and they were on their way out the door. When my kids (6 & 9 returned they said they loved them. So this will be a keeper in my house. And like another reviewer stated...the sauce does keep well. I made wraps for myself with the leftovers for the next day's lunch.

I have fallen in love with Thai food, so I had to try this recipe. I must admit my expectations were somewhat low because I never feel like I will be able to successfully produce an Asian dish since I was raised in the South. But I was pleasantly surprised when this turned out to be absolutely delicious. The chicken was very moist. The flavors carried through beautifully on the chicken. This recipe is a definite keeper!

I had just bought Ellie's book, "The Foods You Crave" and was just fooling around with the recipies. i made the peanut dipping sauce, it was excellent for dipping celery and carrot sticks in. It was also fabulous tossed with some left over whole wheat pasta and shredded carrots and a few sugar snap peas, do not try to heat the sauce though, it will dry out. Definately worth making. Would be great for a party dip!
