    I prepared this dish for my family and they all loved it. The sauce was perfect and the chicken tasted great on its own as well. Definitely let the chicken marinate for the one hour (and longer if possible. Also, I made a coconut rice with the rest of the coconut milk. Like another poster here suggested, I used the milk and chicken broth instead of water to cook the rice. I also added some peas and a little extra salt. Once the rice was ready, I mixed it with some fresh scallions and cilantro. It was perfect with the chicken. I will most definitely be making this dish regularly.

    The chicken part of this recipe is good enough for a weeknight, but I wouldn't serve it to guests, only because I found it pretty basic tasting. I didn't make the peanut sauce for dipping (I bought a pre-made Thai kitchens one, but it looks like it would be better than the store-bought one. I made white Jasmine rice and squeezed lime juice over the rice after cooking. I love that Ellie lists out the nutrition facts!

    I live alone and I love the fact that the peanut dipping sauce lasts for a while so I can make one batch and have it several times (and over non-consecutive nights, which is always a plus! since I'm not a big fan of leftovers. I don't use the skewers but just saute the chicken in a skillet. I make this recipe all the time!

    We eat a lot of Thai food and we always get sate. This recipe is great. I did thin out slightly with a little more chicken stock. I will make this again and again.

    Everyone thought the chicken was delicious, but what really made this meal is the peanut dipping sauce. I'm so glad I have this recipe. Easy weeknight meal. Next time I will let the chicken marinade longer. With the rest of the coconut milk, you could make coconut rice. Yummy!

    This peanut sauce was absolutely AMAZING!!!! I wanted to eat more, so I took the recipe for the sauce, added double the red curry base, 1 tbsp cider vinegar, 1 tbsp fish sauce, more red pepper flake, and 1 cup of light coconut milk. I poured the sauce over cooked spaghetti and broccoli, topped with green onion & basil, and had the most delicious cold thai noodles!!

    I'm a chef and I know there are a lot of bad recipes out there for peanut sauce but this one is great! I had to thin it out a bit with chx stock just until it coated the back of my spoon. My whole family loved it.
