    I made this for my parents to eat on the go between work and a christmas play and it was fabulous AND portable. Since it is mid winter, I actually just seared them in a regular frying pan and they were just as good as the grill. The dipping sauce is also amazing and allows for a lot of variation (can be more spicy or more sweet. This is my new go to mean and snack!

    I tried this recipe a couple months ago and I love it! I usually use the left over coconut milk from the marinade to make coconut rice or something as a side. The sauce is wonderful; I add a little extra red curry paste for some extra spice. If you don't feel like firing up the grill, stove top works just fine for the chicken. You do have to make sure the chicken marinates for one hour and i shake it every now and then so everything stays mixed well.

    If you like spicy and/or peanut butter, this is the BEST sauce. I didn't have any scallions so I substituted with extra ginger. I didn't grill the chicken but just cooked it in a pan. The chicken turned out fine, but the sauce is definitely the highlight.

    I liked this a lot but it needed a little more spice for me. I added a little chili oil, extra lime and cilantro to the peanut sauce. Chicken marinade was good, but needed some salt or something. Chicken was a little bland. Easy to make and the kids liked it. Will make again.

    I made this peanut sauce for the first time about a year ago for my family when they were visiting. It was a huge hit with them, and I loved it. I ended up using the leftovers for all kinds of things....mixing it with noodles for a cold peanut noodle, mix it with a little olive oil and rice vinegar for a peanut salad dressing, I use it in stir frys - it has become a staple in my refrigerator!

    I used regular soy sauce, and added salt and pepper, grilled the chicken and wrapped in bibb lettuce, very very tasty.

    We have tried many sate (or satay recipes and this is my family's favorite light sauce by far. (And it's tied for #1 overall with another recipe that takes far too much time and has too many calories/too much fat. Perfect combination of flavors, just spicy enough for the whole family to enjoy. The marinade helped keep the chicken moist an added a great flavor. I confess that I have become lazy and just grill the marinated tenders rather than threading them on skewers (so I suppose it's not really satay -- no one seems to care!

    I have to start by saying a big WOW to the dipping sauce. I could eat that on just about anything! I didn't skewer the chicken, because I don't have a grill, so I just used a handled grill pan and cooked them that way. I know, it's no longer really a satay, but the taste was all there. :- The marinade was great, and the chicken turned out very tender. Thank you, Ellie! This is a new favorite!
