    I also used nonfat Greek yogurt, which I think helped to thicken the soup. Didn't have the dill so it was left out, but the soup was still tasty! Easy, no-cook meal after a long work day. Thanks Ellie!

    I also used non-fat Greek yogurt, but needed to add a splash of cold water to thin it a bit. Also I added 1 tablespoon of white wine vinegar for a bit more tang. It will be a new bit of ammo in my healthy food fast artillery!

    Make sure to add enough salt to bring out the flavors. Instead of red tomatoes, I add two tomatillos for a zing. It's delicious this way

    This recipe takes about 5 minutes to make, can be made well in advance (and, really, should be made in advance to allow the flavors to blend, and if you follow through with the tomato, dill, and olive oil garnish, makes a really elegant and sophisticated opener for a dinner party in the summer. Two notes: I use the slightly more expensive Greek yogurt (a mix of full fat and 2% rather than standard yogurt. Also, be cautious about salt use: too much really overwhelms this dish. A teaspoon is quite adequate.

    I'm sorry I usually love ALL foods especially if they are healthy and from Ellie Krieger, but this soup was just awful!!!

    I always seen this sort of cucumber soup on fancy cooking shows. Straight off it sounded kinda gross but I was curious. I was quite pleasantly surprised. I thought it was gonna taste bland but it was indeed tasty. Very healthy and refreshing. The only thing I didn't put in it was the dill, because I didn't have it at hand. Yet it tasted good. I am glad I tried this recipe. Yay for healthy dishes that tastes good!

    Nobody in my family liked it, but I think with some tweaking, I might come to like it. Maybe it would be better with the greek style yogurt.

    I didn't follow the recipe exactly because I try to use what I have on hand. Instead of using scallions, I used 1/4 of a sweet onion and instead of dill, I used about 1/4 cup of cilantro. Since my fiance has angina, I always skip the salt and use a salt substitute called mushroom powder that can be bought in asian markets. This soup was so awesome! My fiance loved it as well. It was a bit thin like others had said in previous reviews but it didn't bother me a bit. Thanks Ellie for a recipe I will make again and again. It's a perfect soup for these hot Texas summers.

    I was just finishing this recipe off when my best friend surprised me with a visit. I served it with whold grain French bread and chardonnay. What a surprise for the taste buds! It was tangy, cool and so, so light. My BFF won't make anything with more than 5 ingredients, so she left with recipe in hand to add it to her arsenal. I plan to try it again with a Greek spin and use mint. The dill was a nice touch and not too strong. I left off the tomatos, but the olive oil made the texture quite silky. In a thermos this will stay cool until lunch time. Also good as an appetizer before dinner. I couldn't believe how easy it was to make!

    I added onion and garlic powder, plus lots of salt and pepper. It definitely needs some kind of spicing. Overall, it's very simple and delicious, plus it's healthy! Would also probably be good with sour cream as a garnish.
