    That dosent exactly look like creamed spinach.It looks like something you really dont want to eat.

    This is the worst creamed spinach I have ever eaten. It is tasteless, boring and a huge disappointment.

    I love creamed spinach and have made several different light versions over the years. I was excited to try this, but disappointed with the results. I thought it was very bland and did not eat it. The spinach was also very watery. I made this for my parents for dinner and we all agreed that the consistency was too watery. That being said, my mother really liked it and said she would eat it again. I generally like Ellie's recipe, but I was not impressed by this one.

    IThis is my first recipe review, and normally I will try something and then never really worry about writing a review. I feel compelled to let people know how much I loved this recipie! I made little changes based on the ingredients I had, but it was such a hit with my family. I used 2% condenced milk, added some parmesean cheese, and I had red onion instead of shallot. Overall it was great and I will definitely make it again!!

    I am generally an Ellie fan and have tried many of her recipes. I have learned that if the first time I am not crazy about something that I can tweak it and compromise between health and better flavor or consistency. In this case, I must begin by saying that I don't like nutmeg, so that might affect my opinion, though I absolutely love creamed spinach and usually find that adequate salt and pepper is enough to season it. Anyhow, I digress. I have made this 4 times thinking I did something wrong before and can never finish it. Where it calls for 1.5 cups of milk (1%, that seems too much as it never simmers down enough. I have since tried to strain it before serving, but it continues to have an odd taste, consistency and leaves an odd lime green, floury liquid that leaks out elsewhere on our plates. Plus one other comment about her recipes. I don't generaly use condensed Fat Free Milk. So once you have used 2 tsps, what do you do with the rest of the can? I have always found a use, but sometimes she calls for very small uses of odd ingredients that you are left trying to find other uses for.

    I omitted th evaporated milk because I didn't have any on hand- although I did use whole milk which I'm sure made it creamier. This was easy, quick and delicious- my husband and I both had seconds! I served it with baked pork chops and sweet potatoes.

    Great flavor from this cheap side.

    I defrosted the frozen spinach for 13 minutes on defrost setting in microwave.
    I placed the boxes in a bowl to defrost the spinach because it will leek. I used paper towels to wring out the excess water from the spinach. For additional flavor I added champagne vinegar to my spinach.

    Not only is it delicus but so easy. The hardest part is getting all the water out of the spinach and chopping the schallots. It cooks in munitues.

    I decided very quickly to make creamed spinach as opposed to regular even though I have never made it before. I found this recipe and made it with some substitutions. I used canola oil in place of olive oil, regular onion in place of shallots, and I added garlic salt and a bit of butter at the end. I will make it again. My entire family, including a picky four year old, ate it and liked it! Easy to make, go for it!
