    I have made this several times and think this soup is fantastic. I used a larger butternut squash(4lb. I thought it would be richer and it was. All I added was fresh ground pepper. The curry made this dish sensational. It does taste even better the next day.

    Excellent recipe, I substituted 2 cups of chicken broth for water. Next time I won't puree it all, I think it may be a better consistency to leave some of the squash in chunks.

    This is a great way to eat butternut squash! The soup is delicous and easy to make. Because of this recipe, I now eat a lot more squash and that's a good thing!!

    Having never eaten butternut squash soup before, I was unsure what kind of taste to expect. However, my guests & I really enjoyed the flavor. One person commented that, although tasty, it reminded him of baby food.
    I would probably add a bit more garlic and/or curry next time for a slightly stronger flavor.

    Just made this soup for lunch and really enjoyed but thought it needed a little more salt to taste. Served with a red leaf lettuce and cherry tomato salad topped with Ellie's ranch dressing. Will definitely make both again.

    I will be making this again, but in a bigger batch so I can freeze and have whenever I like! It has fabulous flavor and it is so easy to prepare. I am putting a immersion blender on my Christmas wish list now so that I can make this even more simply. (I used my blender and it worked fine.
