    These quesadillas were wonderful. My eight year old children also really enjoyed them. This is another way to get them to eat whole grains and more vegetables. I did use a very sharp cheddar which added to the flavor a lot. They will definitely become part of the normal dinner rotation. Quick, easy and healthy!

    I really don't like mushrooms, but I could eat them just fine in here! This were out of this world! Plus, these are great because I can easily cook for one and it's fast and easy. Thanks Ellie!

    I am only 9 years old and i devoured it. I mean I just couldn't help but have a piece of mushroom when it was cooking because it smelled so good.It is not abad choice at all to add to recipe book and if you don't have a recipe book then make one and put this recipe on it IMMEDIATELY.

    this quesadilla was excellent, and fast. great for those mexican cravings or if you need a cheese fix. next time i think i'll add some cilantro!

    I can't believe it my daughter of 6 just ate whole grains and spinach. She loved them. I will be making these again as well as passing on the recipe.

    I had a hard time doing this as a quesadilla, so I make it as a taco and eat enjoy it that way. It also keeps for the next day in the fridge for lunch. Love the spinach and mushrooms combo. I make it about 3-4 times a month.

    We love chicken quesadillas at the restaurants - but so fattening. These are as good, if not better as the restaurant. Amazing flavor and the perfect amount of spice. You can taste the healthy ingredients in every bite and you can feel good about eating it. I think next time I will try using a low-fat cheese, and thus, use a little more cheese for goeyness.
