    I made these quesadillas this weekend and they turned out perfectly!! I added black beans to the recipe & they were great with the other ingredients. Delicious recipe, thanks!!

    My husband and I enjoyed the quesadillas though I used 2% shredded cheddar instead of the full fat cheese and fat free sour cream instead of reduced fat to save on the saturated fat which I though was a little high for the recipe as published. I am giving only 3 stars and not 4 because it took much longer than 28 minutes to prepare and cook this meal....it took more than an hour. I suppose if you have pre-cooked chicken and pre-washed spinach and pre-washed mushrooms it would be quicker.

    Wow this was great. My husband and I really enjoyed this. This was very filling and just delicious. I would have added more spinach. This will become a regular at our house. I am really enjoying Ellie's recipes.

    Another awesome receipe from Ellen. Easy and bursting with flavor, I did add cayenne pepper with the spices. This is an easy and super healthly receipe.

    I did not use the spinach because my husband can't have spinach, but just with the mushrooms these turned out awesome! I cut the mushrooms into 3rds, since the recipe didn't specify, but I will probably do 4ths next time. A whole tortilla is almost too much, so I would do as the recipe suggests and do 2 fourths servings and pair it with a green or fruit salad. Also, to make the chicken prep as easy as can be, check out the frozen grilled chicken strips in the frozen meat section. You can cooked these in the microwave in a flash and they taste good, and not fatty.

    My husband and I just loved this recipe!! I was alittle hesitant using the spinich because I didn't know what it would taste like. Well, overall it came out great. Will make them again. Thanks.
