    It took a little longer to prep since I had to cook the chicken but these turned out to be very good. I didn't even use sour cream. You could even leave out the chicken and just use baby bella mushrooms and more spinach, the mushrooms are meaty enough. I also subsituted thawed frozen spinach instead of fresh. I will make these again!!

    This was easy and I had everything I needed on hand, which is often the biggest frustration when trying put a quick meal together- I used Emeril'Essence for seasoning as well and it made it more punchy- I also used sliced baby bellas b/c I didn't have suggested shrooms and it tasted just great! Hearty and healthy!

    It always takes me longer than the recipe said, but this was still an easy dinner and very delicious. Leftovers were great, too!

    Very good recipe. Mushrooms and spinach added wonderful flavor as well as the taste of fancy to this flavorful dish. My husband loved it - and asked to add it to our weekly rotation. Thanks Ellie!

    recipe was really good grille dthem on my foreman grill. I used sharp white cheddar instead it gave them more flavor. Another time i used smoked gouda and added red onions. Yummm....

    I did make the quesadillas and my family wasn't crazy about them. But I had all this yumming filling leftover. So I decided to give it a second chance by adding more spinach and throwing it over Gemilli Pasta....now that they loved!
