    The recipe was great! Instead of putting sour cream on the side to dip in, I made a chipotle sour cream and went ahead and put it on the quesadillas as a sauce. If it is just on the side I tend to dip way to much! I also used queso fresco instead of the Mexican blend. They came out great and my family has already requested them for the pool party this weekend!

    This was delicious. I made it exactly like the recipe but forgot to serve it with salsa and sour cream. My 10 year old daughter and her playdate gobble it up immediately.

    These were delicious! I substituted a green bell pepper for the spinach because it was what I had on hand; I sauteed the bell pepper with the onions and mushrooms, followed the other instructions, and it turned out great. This is a fabulous recipe if you cook for one, as I do. I made the entire recipe one night and reserved much of the filling to make quick quesadillas on other nights. Thanks, Ellie, for this great recipe!

    This was pretty good, but kind of a lot of work for a quesadilla. I usually just make bean and cheese quesadillas with some mushrooms and bell pepper. I'll probably stick to those since this recipe was kind of a hassle for the limited flavor.

    really liked this, hubby too! grilled chicken with our steaks to use for this recipe, so good. love how it's easy and i had all the ingredients on hand. trying to ease into whole grain torts, pasta, etc. i love ellie and her recipes so much! wish she was on fn alot more, she, guy and michael symon are my favorites. enjoy the healthier recipes they offer. but i still love my miss paula too!! gotta cheat and have some butter and fried chicken sometimes! lol!!

    i took out the mushrooms and added bell peppers. and used zero salt. great recipe. it came out better than expected.
