I made a few adjustments too. I couldn't find proscuitto at my tiny grocery store, so I used bacon instead. I like my spinach more wilty than how Ellie's turned out, so I wilted it in a little bit of the bacon fat before adding it to the pizza. Obviously not healthy like hers is, but yum! The only problem I had was with the eggs. The whites got rubbery and the yolks got really hard. I mean, really hard. I think next time I will try baking it at a lower temperature, maybe 400? Other than that problem, it was really good.

I wasn't sure my husband would be excited about trying this pizza, but the proscuitto won him over. We were both very pleased with it! It was delicious, and I wouldn't change a thing the next time I make it. The addition of fresh basil with the fresh spinach might be good, but otherwise this had a lot of great flavor and I'll definately make it again.

Made a few adjustments...but this is GREAT, either as breakfast or anytime for that matter...

Didn't like the personal sized whole wheat pizza shell (too thick for my tastes and my diet, switched to using whole wheat Naan bread which gave the ingredients a better chance to shine...

Added a pinch of dried basil to fresh spinach topping...

Wasn't happy with the egg cooking whole on the top, so the next time I made it I just scrambled the egg and poured it over the spinach...

It comes out to die for...doesn't taste like I'm staying on my diet...and I usually have about a third of it left over for a snack later...so nice to find a filling meal that keeps me satisfied...TRY IT!!!

My husband & I just loved this recipe! everything abotu it was great. I also was a little worroied about the lack of salt and pepper not being on the recipe but the floavor of this meal was perfect. The table conversation was silent just a bunch of "mmm" and yums" going on : Will be making this recipe many times in the future....

So I have to be honest, when making this I thought there is NO way this is going to be good. Even my husband said "what the heck is that!" I started to make pasta as a back-up meal..but boy WAS I WRONG...this was fantastic!!! Even while eating it I thought, there isn't even any salt or pepper (plus I omitted the ham b/c it is a Friday during lent, no meat and it was still fantastic!!! This was my first Ellie meal made and I think I am hooked!!! Make this tonight, it was awesome!!

This was one of our favorites!! I will surely make this again and soon. the egg so complimented the meat and cheese. I ended up using ricotta salata cheese as welll. I also made my own whole wheat crust which turned great. This was a great great meal and filling!!

This was great! The first time I made it I overcooked the egg yolks, and it didn't turn out right. You need to watch the eggs carefully so this doesn't happen. I knew I would like it, but not this much! Its a great combination of flavors. I'm kind of appalled at the amount of sodium in one slice, but I'll deal with it to have this every once in a while.

This pizza is so easy and delicious! I used a few strips of cooked/crumbled bacon instead of the prosciutto, but it was still tasty!

We absolutely love this pizza. One thing we do though is make our own crust. It is really really easy and makes this pizza even better!

this was entirely too easy to make and SO good. it is everything i want in a dish. if i were stuck on an island with one meal to eat every day for the rest of my life, this would be it. no question.

but do mind your yolks...they can get a little wild.
