Heat the oil in a large saute pan over medium heat. Add the shallots and cook, stirring, until shallots are soft, about 2 minutes. Add the garlic and cook for 1 minute more. Add the escarole and cook, stirring, until it has wilted, about 5 minutes. Add the chicken broth, and chili flakes. Bring simmer and cook over a medium heat, stirring occasionally, another 3 minutes. Add the vinegar and cook for 2 minutes more. Season with salt and pepper. Stir in pine nuts just before serving.

    what a lovely mild greens dish! I find most greens too bitter but this escarole is very pleasant and the flavors are excellent. the only thing I will do differently next time is reduce the time during the wilting phase... it seemed to get too wilted and I wished by the end that it had a bit more structure. I would reduce the time to only 2-3 minutes, and heat to med-low, but I do have a gas range. don't be scared if you have never tried escarole- it was my first time trying it and I loved it!
