Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 2 to 3 garlic cloves, peeled and chopped
  • 1 (16-ounce) jar roasted red peppers, drained and chopped
  • 1/2 cup low-sodium chicken stock or vegetable stock
  • 1 cup crumbled feta cheese or a 6-ounce block
  • 1 pound whole-wheat fettuccine
  • Salt
  • Freshly ground black pepper
  • 2 tablespoons chopped fresh parsley leaves

Directions

Heat the oil in a heavy skillet over medium-high heat. Saute onion and garlic until soft, about 10 minutes. Add roasted peppers and saute until heated through. Remove from heat and let cool slightly. Place mixture in the bowl of a food processor with stock and all but 2 tablespoons of the feta. Process until combined and smooth, about 30 seconds. Cook pasta according to package directions. Drain, reserving 1/2 cup pasta water. Toss pasta with sauce, adding pasta water by the tablespoon, if needed. Sauce should cling nicely to pasta. Season with salt and pepper, to taste. Divide among pasta bowls. Sprinkle with parsley and remaining feta cheese.

    This seemed to get mixed reviews online, but I decided to go ahead and try it anyway. My husband didn't like it at all... (which is unusual for him) but I would have made it again for an easy weeknight meal. This might be one of those recipes to try for yourself, since these flavors seems to go across the board for taste preferences. If you make it, definitely add italian sausage, chicken or shrimp or you will definitely be hungry an hour after dinner.Read more

    I made this mainly because I had a jar of red peppers stuck in the back of the fridge and some leftover feta cheese. Boy, my... wife and I were pleasantly surprised!     This really does not seem like a light recipe. It is cheesy and creamy, with a great roasted red pepper flavor. I really am... shocked about the number of people who gave this recipe poor reviews. I have to wonder about their palates, or if they made the recipe wrong or didn't use good ingredients. My husband and I both love this recipe, and we have made it several times. Do reserve some pasta water, in order to adjust the consistency of the sauce as needed at the end.     I love roasted red pepper, feta cheese, garlic, onion, and pasta,... just not together. This recipe was TERRIBLE. I ended up... throwing the sauce away and making just plain tomato sauce so at least the pasta wouldn't be wasted. Won't make again!Read more
