This was totally FANTASTIC! Really, it was! My dad never remarks much on food and he was really delighted with this number! I substituted 8 oz tomato sauce and 4 oz tomato paste for the second can of tomatoes and I also substituted ground turkey for beef. I doubled the carrots and left out the celery. It was hearty, creamy and filling! It really feeds about 6-8 people depending on serving size because the sauce is hearty. Give this one a try...

This sauce is yummy and very easy to make! Like other reviewers recommended, I substituted 8 oz tomato sauce and 4 oz tomato paste for the second can of tomatoes; with this adjustment the consistency was good. I also substituted ground turkey for beef. My fiance is a picky eater (avoids carrots, celery, and mushrooms but he cleaned his plate and said he could hardly taste the veggies! We both had filling plates and there is enough left over for 3 or 4 more; next time I'll make just enough pasta for 2 portions, and freeze the extra sauce.

My family really liked this dish. I had read other reviews, so I added 2 tablespoons of tomato paste to thicken up the sauce, but it was great. You really have to mix the sauce into the nodles, not try to scoop it on top. My husband doesn't like mushrooms, carrots or celery- so I chopped them up small and didn't tell him they were in it until after he had practically licked his plate clean. I used half whole wheat pasta and half regular, which is great if you are not a big fan of whole wheat pasta. Next time I plan to add even more veggies in there. My toddler asked for seconds- amazing since she will rarely sit still long enough to finish he first dish. Made enough for a couple of lunches, which were just as good as the first time. We will likley eat this meal on a weekly basis!

This recipe is delicious and a great way to add extra veggies into your diet. I also used a can of tomato paste and tomato sauce. It might also be a good idea just to chop the mushrooms into halves instead of finely chopped. Overall it was great!

This was very flavorful and my whole family loved it, even my 17 year old who tries to avoid vegetables. I watched the video of Ellie making it and the sauce did look a little thin. So I took the advice of some of the reviews and replaced one of the cans of diced tomatoes with a 8oz. can of tomato sauce and a 4 oz. can of tomato paste to thicken it up. The tomato paste also gave it some salty flavor, which I think it needed a little more of. I also replaced the thyme with oregano. Very Tasty & healthy! Thank you Ellie, this is a keeper!

My sons love this sauce. So fresh tasting and so wonderful to get more vegetables into the family's diet. (I leave out the milk.
