    As risotto lovers, my husband and I have tried many versions over the years. Ellie's Garden Risotto is by far the best we have ever made. It is creamy and full of flavor. What a great way to get more delicious veggies into an already-wonderful dish!

    Boyfriend and I are doing the low-calorie diet and have been adjusting to examining portions and caloric content. Its been a hard 4 weeks so far, fighting off the urge to overeat because we don't "feel as fulfilled" after eating proper portions.
    We made this as a side dish to baked chicken and let me tell you, it was AWESOME and last night, we both said it was so hearty that we didn't feel hungry after our 1 serving. BRAVO!

    Too high in sodium for a small side dish that's supposed to be healthy. Why would you add salt when you have low sodium chicken stock? Why not black pepper if you want to perk it up?
