    This dressing is absolutely delish! I've always used my mom's "ligtened up" recipe which is very similar to this but with light mayo. I never thought of omitting the mayo entirely. I was a bit hesitant as I was used to the consistency with mayo but this surpassed my go-to recipe! I'll now be using this from now on and will feel even better knowing this is more guilt free than my original recipe. Thanks, Ellie

    This was my first time making Caesar Salad and what a wonderful recipe to use. I only used about half the dressing because I don't like much but that is a personal preference. The chicken marinated and was sauteed, then diced and added to the salad with cherry tomatoes. I served this with some bread and sliced apples.

    I love Caesar Salad, but never can order it in restaurants because of the amount of calories, this recipe is unbelievable because it taste the same and I love the way it's mixed with spinach and romaine! My roommates and I loved it and will have it again!

    We are trying to find ways to make our favorite dishes more healthy and this hit the mark! We have always loved the mayo based Caesar that RR makes and this is the perfect replacement! Our waistlines thank you!!!

    This was so good that I had to wonder if the next bite was going to be as good as the first... and it was! Ellie is brilliant for incorporating the egg product - you'd never know it was low fat unless you made it yourself. I didn't have anchovy paste available at my supermarket so I made my own paste out of one anchovy. (I had never done that before! I just had this for lunch and we're having it again for dinner. And quite possibly breakfast too!!

    Really great, low cal, super easy version of classic caesar dressing. Note: if the nutrition facts mean to include the chicken breast, the protein content has to be at least 5 times the 5 grams listed for a 4 oz. breast.

    I loved this recipe. I wouldn't even call it a low-cal version b/c it tastes so close and is very close to a classic caesar dressing. I will definitely be using this in the future.

    Superb! We are BIG caesar fans and have tried many caesar dressings through the years. This one was THE BEST! We remain equally incredulous as other reviewers that this is a low fat recipe! Replacing the high fat mayo with the egg beaters was brillant of Ellie! We roasted some cubed-up bagels with a touch of olive oil, granulated garlic, iltalian seasing and parmesano reggiano to make home made croutons and great crunch. The key to the dressing--- using really great parmesano reggiano and the egg beaters! Thank you Ellie!

    My family and I LOVED this recipe for a lite Caesar Dressing. It was wonderful. I didn't make the chicken though. Thanks for this healthier version of my favorite salad dressing.
