very good. Ok, so I cheat and use canned pineapple sometimes since I seldom have a fresh one on hand (and I usually make this at the last minute. Still tastes good. I make a little more sauce since it is sooo goood. I also toast a little coconut in a pan and top the ice cream and sauce with it. Entire family loves it and want more.

Very nice. A classic pairing of pineapple and rum. I went with a light vanilla bean ice cream and it came out great. I would recommend taking a match to the rum sauce while in the pan to burn off the alcohol which leaves it with a nice rum flavor, but not the bite. Be careful though, the open flame can get 12" to 18" high. Makes for a good show though.

Try it and dont change a thing. Remember to cut the pineapple thin.

I used just the grilled pineapple and rum sauce recipe (without the ice cream and used it to complement a Paula Dean cheesecake I made; this was the second of two cheesecakes I made. It is essential not to over cook the pineapple, as that will dry it out.

This was sooo easy to make!! It was such a hit, everyone asked for THIRDS and the recipe!! The mix of flavors complemented each element of the dessert. I didn't have any problems with the sauce, it thickened once everything is dissolved and I let it stand for a few minutes. I used canned pineapple instead of fresh because I was pressed for time. However, I sauteed the the pineapples and I used a bit of the juice to help carmelize it. Excellent and tasty recipe! I have been requested to make this again at my next get together! ~Severina
