    I made this recipe for our swim team banquet. I liked this because it was different and a good way to use up my summer garden veggies! I also added couscous and an 8oz container of Balela (a mixture of chickpeas, tomatoes, and black beans. This is available at Trader Joe's near the deli meats. I increased the dressing, to allow the couscous to soak some up. It was a hit at the banquet. I had many requests for the recipe! Thanks for another great recipe.

    I can't use a grill pan on top of my ceramic top stove so I cut up all the veggies, put them on a large baking sheet, tossed them with some olive oil, salt, and pepper, set the oven to 400?, and roasted them for about 20-25 minutes. Also added grape tomatoes. Really good combo of flavors.

    I'm always up for trying new vegetable dishes because I don't like vegetables very much. I usually settle for the same ones i know i will like (which is getting really boring. This was a burst of flavor! The red pepper did not overpower the rest of the vegetables like i expected. I am excited to try this dish in new ways. The mint brings great balance to this dish, so don't skip that ingredient. Love Love Love this dish.

    I saw Ellie make this recipe on Sunday morning and thought it looked great, so I figured I'd pick up the ingredients to make it this week. It took a while to grill all the veggies since I had to do it in batches on my stove top grill pan, but preparing the rest was a snap. After I cut everything up, assembled the salad and took my first bite I could not believe how flavorful it was. The ingredients are so simple, but the taste is amazing. I did leave out the mint though, since I am not a fan. This is definitely a must-try recipe.

    I made this on a Sunday to have ready during the work week so I didn't add that much mint maybe a tsp. if that.......... didn't want it to bleed into the salad also not a big fan of mint............. absolutely delicious...........so yummy each step is just another flavor so taiste as you go along so good.......so good..:-
