    These sound very good. I will try making these and perhaps baking them with marinara and parm/romano sprinkled over the top. I see this as a great carb free meal instead of an appetizer and a way to make the time involved, even more worth it.

    This recipe has alot of potential -- with some minor modifactions.
    I suggest slicing the zucchini as thin as possible-- otherwise they will crack as you roll them.
    Second suggestion -- I didn't have fresh basil leaves, but subsituted approx 3 teas basil pesto in 5 oz of herbed goat cheese. It rocks !
    Third, I used about 5oz of herb flavored goat cheese -- again a taste treat. (still included the parsley and lemon
    I also had great success cooking the zucchini under the broiler...

    What I love about this appetizer is it is really delicious yet light enough for everyone to enjoy and still have room for the meal. The rolls do take some time so make extra for a yummy and healthy next day snack.

    While this is a tasty recipe, I think it has some flaws. First off, it's veeeeeeeery time consuming and second, the amount of goat cheese listed isn't nearly enough for even half the zucchini. I've had to double or tripple the filling amount in order to use up the zucchini. I like the taste, but it's a lot of work to make this recipe and it's just an appetizer that's gone in no time. Not sure when I'll be making this again.

    Garden is PUMPING out zuchini's and this recipe is easy and very delicious. Would recommend to anyone for a great snack or side for dinner.

    Made this today as a BBQ appetizer and it was a great hit! Goat cheese turned some people off so we decided that next time we'll make some with goat cheese and some with cream cheese.

    These were very good! I added a candied pecan to the middle of the roll - it made it harder to eat but the mix of flavors was wonderful!

    These are delicious little bites and would be great as appetizer cocktails for a bunch of guests!

    I love how Ellie puts the calorie breakdown with each of ther recipes.
    Wait...that puts each roll-up at 80 calories?
    Hmmm.. is that...80 calories a bite?
