    This is a delicious recipe, as are all of Ellie's recipes. We've made this several times, including for Christmas dinner. Guests have all raved about how tender the meat is and how unexpectedly delicious the sauce is with the pork. It's such an easy main course to prepare, but the herb rub gives a complex flavor to the meat. This is a definite keeper!

    Better than 5 stars. Thank you so much, Ellie. This is THE recipe. Every single person who has tried it has asked for the recipe -- and their guests ask them for the recipe. Everybody likes it -- from foodies to fast-foodies. I sing Ellie's praises every time I make this. It's amazing. Trust me, just make it. I serve it with the honey roasted sweet potatoes. Sometimes I have to add a little extra lemon because they vary. This is our favorite recipe. I have since tried many of Ellie's recipes and without fail we've loved every one of them. Her recipes are unexpected, delightful and refreshing. Such a gift. Thank you, Ellie! We love you!

    This was a very flavorful way to cook a pork loin with the olive oil and herb crust. An added plus to this recipe was that I had these herbs in my garden so I didn't have to buy them, although dry herbs would have been fine. I didn't make the shallot sauce but I may try that when the weather is warmer again. I will say that the drippings with the herb flavors made a delicious gravy. The pork was also good as a leftover and the flavors were more pronounced!

    Moist and delicious, besides simple to make!
    I couldn't find flat leaf parsley but the parsley I used worked fine.
    Also served w/ pasta (wide egg noodles and sauce went great on/with that as well.
